Pot Pie
This is the perfect meal to serve up on a cold wintery evening!
Ingredients
1 onion, peeled and chopped finely
500g lean mince
250g fruit chutney
1 sheet of puff pastry
Method
Preheat oven to 180C. Place onion in a non-stick fry pan with a little water and cook on medium heat for 5 minutes. Add mince and cook till brown, then add the chutney. Reduce heat and simmer for 10 minutes. Spoon the mixture into 4 pie-sized ramekins. Cut ramekin sized circles out of the puff pastry and top pie with each. Press with a fork to firmly seal the edges. Bake for 20 minutes or until pastry lid is golden.
Serves 4
Optional: Substitute fruit chutney for tomato chutney for a change.
