Mandarin and Almond Cake (as seen on SUNRISE last Thursday)
Celebrating Citrus all the way from Mundubbera!
Ingredients
3 mandarins1 cup (200g) caster sugar
6 eggs
2 cups (250g) almond meal
Method
Cover mandarins (skin and all) with water, bring to boil then simmer for 1 hour. Cool completely, remove seeds and puree. Using an electric beater, beat eggs and sugar together for 10-12 minutes. Add puree and almond meal. Gently fold until combined then pour into a paper-lined 22cm cake tin and bake at 160C for 60-70 mU have one hell of a book there and I just cant wait for my mum to get one sent to her in UK for her to bring out with her to Zim when she visits in Jan - well done to u guys for being so wonderfully ..
